
YIELD: 1 drink
Ingredients
2 cups cubed watermelon
4 ounces prosecco or sparkling wine
4 ounces Aperol
2 ounces flavored sparkling water, preferably watermelon
Sliced watermelon wedge, for garnish (optional)
Instructions
- Add the watermelon to a blender and puree until smooth.
- Strain through a fine-mesh strainer set over a measuring cup.
- Reserve solids for another use (for a smoothie or as a topping for a yogurt bowl), and add 2 ounces watermelon juice to each glass. (Store remaining juice covered in the refrigerator and enjoy within 3 days.)
- Fill each glass with ice then add 2 ounces prosecco and 2 ounces Aperol to each glass; stir to combine.
- Top with sparkling water and garnish with watermelon slices.
