Caterer: A Fare Extraordinaire
Venue: Drummond Ranch, a historic cattle ranch in Osage County, Oklahoma

Overview: In May 2025, the team at Houston-based A Fare Extraordinaire took their talents on the road to cater this 471-guest wedding for Paige Drummond and David Andersen. The celebration took place against the sweeping backdrop of the bride’s family ranch—recognizable to fans of the Food Network’s The Pioneer Woman, hosted by Paige’s mom, Ree.

Menu Highlights: Alongside two specialty cocktails—Woodford Reserve old-fashioneds and Hugo spritzes—guests enjoyed passed hors d’oeuvres, including bone marrow arancini dotted with roasted peach mostarda, heart-shaped honey butter chicken biscuits, Australian lamb lollipops dotted with mint chimichurri, bacon-wrapped poblano quail, vegetable dumplings presented on chopsticks and watermelon cubes filled with green tomato tartare.

The seated dinner began with an iceberg wedge salad with bacon lardons, yellow and red grape tomatoes, pickled red onions and roasted corn, served with ranch dressing and hand-torn croutons presented in a parmesan cuff. The main course featured a beef tenderloin filet entrée in a rich demi-glace with garlic mashed potatoes and charred broccolini, topped with sweet potato threads, as well as a fresh fruit entrée served Russian-style, with melons, pineapple, mango and berries, tossed with a touch of honey and fresh mint chiffonade.

After a sliced wedding cake dessert course, revelers enjoyed a passed late-night snack: shoestring French fries offered with ranch dressing and ketchup in miniature squeeze bottles; miniature beef corn dogs passed with mustard; and brandy Alexander freezes (brandy, creme de cacao and vanilla bean ice cream), passed in a shot glasses with striped straws.

Décor Details: Following the outdoor ceremony, where the couple exchanged vows at sunset in front of a floral-adorned cross, guests headed to a custom-built pavilion with a monogrammed dance floor. There they found a venue blooming with the colorful, wild-looking flowers requested by Paige—which also adorned the towering cake with a raspberry filling from Amy’s Cakes. Western details added to the ambience, including saddles for bar seats, cowboy boot place cards, a groom’s cake shaped like a pickup truck and a station where guests could get custom-embroidered bandanas.

Takeaway Tips from A Fare Extraordinaire: For caterers hired for a complex wedding away from their home base, the team at A Fare Extraordinaire offers the following pointers:
- Master the logistics early
Executing a multi-state event requires precision and foresight. Our Houston team developed a detailed plan months in advance—including coordinating travel schedules, refrigeration timelines, and kitchen operations—in order to ensure every element aligned perfectly once on site.
- Assemble the right team—near and far
We brought our core service staff from Houston and supplemented with key hires from Oklahoma. This blend allowed us to uphold A Fare Extraordinaire’s service standards while benefiting from local insight and regional expertise.
- Think local without compromise
While our culinary preparations began in Houston, we intentionally partnered with local Oklahoma vendors for on-site rentals, florals and production support. Combining our resources with local talent ensured efficiency, sustainability and a shared sense of pride in the final result.
- Invest in mobile infrastructure
A refrigerated truck served as our mobile kitchen, allowing us to maintain quality, freshness, and food safety throughout transit and final preparation. For long-distance events, this level of mobility is non-negotiable.
- Operate with poise under pressure
With national attention surrounding this wedding, precision was everything. Our team thrives on high-stakes execution balancing grace under pressure with creative problem-solving. Challenges like these remind us why we love what we do.
